4 boneless, skinless chicken breasts

2 ripe peaches, pitted and diced

1/4 cup peach preserves

1 tablespoon Dijon mustard

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1 teaspoon salt

2 tablespoons olive oil

Fresh thyme or parsley for garnish (optional)

Instructions
 

Marinate the Chicken: In a mixing bowl, whisk together the peach preserves, Dijon mustard, soy sauce, apple cider vinegar, garlic powder, onion powder, black pepper, and salt. Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

    Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If using an oven, preheat to 400°F (200°C).

      Cook the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. For grilling, lightly brush the grill grates with olive oil and grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). For baking, place the chicken in a greased baking dish and bake for 25-30 minutes.

        Prepare the Peach Glaze: While the chicken is cooking, heat a small saucepan over medium heat. Add the diced peaches and cook for about 2-3 minutes until softened. Pour in the reserved marinade (if there’s any left) and bring to a gentle simmer. Cook for an additional 5-6 minutes until the sauce has thickened slightly.

          Glaze the Chicken: Once the chicken is cooked through, brush it generously with the peach glaze. Allow it to cook for an additional 2 minutes on the grill or in the oven to caramelize the glaze.

            Serve: Remove the chicken from the grill or oven and let it rest for 5 minutes. Slice and serve drizzled with additional peach glaze and garnished with fresh thyme or parsley, if desired.
