1/2 teaspoon nutmeg

1 cup rolled oats

1/2 cup chopped pecans or walnuts (optional)

1/2 cup vanilla ice cream (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Peaches: In a medium bowl, combine the diced peaches with a tablespoon of brown sugar. Let sit for about 10 minutes to release their juices.

      Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes.

        Add Egg and Vanilla: Beat in the egg and add the vanilla extract, mixing until well combined.

          Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
