Peach Chicken Skillet

4 boneless, skinless chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

1 onion, thinly sliced

2 cloves garlic, minced

2 ripe peaches, pitted and sliced (Leave skin on for extra flavor)

1 cup fresh spinach

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

1 tablespoon balsamic vinegar

1 tablespoon honey

¼ cup chicken broth

Crumbled feta cheese (optional, for serving)

Fresh basil leaves (optional, for garnish)

Instructions
 

Season the Chicken: Generously season the chicken thighs with salt and pepper on both sides.

    Heat the Skillet: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken thighs. Cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

      Sauté Onions and Garlic: In the same skillet, add the sliced onions and cook for 2-3 minutes until they begin to soften. Add the minced garlic and cook for an additional minute until fragrant.

        Add Peaches and Spinach: Stir in the peach slices and cook for about 2-3 minutes until they start to caramelize. Then add the spinach and thyme, stirring until the spinach wilts.

          Make the Sauce: Pour in the balsamic vinegar and honey, scraping the bottom of the skillet to deglaze. Next, add the chicken broth and bring the mixture to a simmer.

            Combine Chicken: Return the chicken to the skillet, spooning the peach mixture over the top. Let it simmer for another 2-3 minutes to warm through and meld the flavors.

              Serve: Plate the chicken and peach mixture. Optionally, sprinkle with crumbled feta cheese and garnish with fresh basil leaves. Enjoy warm!
