4 salmon fillets (6 oz each, skin-on preferred)

1/2 cup soy sauce (low sodium)

1/4 cup honey or maple syrup

2 tablespoons rice vinegar

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon freshly grated ginger

1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)

1 teaspoon sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Salt and pepper to taste

Lemon wedges (for serving)

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Teriyaki Sauce: In a medium saucepan, combine the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger. Stir well, then bring to a gentle simmer over medium heat. Allow to simmer for about 5-7 minutes to meld the flavors.

      Thicken the Sauce: Once the sauce is simmering, stir in the cornstarch-water mixture. Continue to cook for another minute until the sauce thickens slightly. Remove from heat and let it cool.
