2 cups cooked chicken, shredded (rotisserie or boiled)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup salsa (mild, medium, or hot depending on preference)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

12 small corn tortillas

Olive oil spray or cooking spray

Optional toppings: guacamole, sour cream, or fresh cilantro

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, salsa, garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper. Mix until well combined and creamy.

      Warm the Tortillas: To make them pliable, microwave the corn tortillas for about 30 seconds, covered with a damp paper towel. This will prevent them from cracking when rolled.

        Fill the Tortillas: Take a tortilla and place about 2 tablespoons of the chicken filling in the center, then roll it tightly. Place the rolled taquito seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.

          Spray and Season: Once all taquitos are on the baking sheet, spray the tops lightly with olive oil or cooking spray. For an extra touch of flavor, sprinkle with a bit of salt or additional seasoning if desired.

            Bake the Taquitos: Bake in the preheated oven for 20-25 minutes or until golden brown and crispy. To ensure even cooking, you can flip them halfway through.
