Ingredients

For the Pancake Batter:

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or your choice of non-dairy milk)

1 large egg

2 tablespoons melted butter (plus more for cooking)

1 teaspoon vanilla extract

For the Oreo Filling:

8 Oreo cookies (roughly chopped or crushed)

For Topping (optional):

Whipped cream

Extra crushed Oreos

Chocolate sauce or syrup

Instructions

Prepare the Pancake Batter:

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

      Combine Wet Ingredients:

In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

          Mix Wet and Dry Ingredients:

Pour the wet mixture into the dry ingredients. Gently fold with a spatula until just combined; a few lumps are okay. Be careful not to overmix.

              Heat the Skillet:

Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with some melted butter.

                  Cook the First Pancake:

Pour about 1/4 cup of pancake batter onto the skillet. Allow it to spread slightly into a circle. Let it cook for about 1-2 minutes until bubbles form on the surface.

                      Add the Oreo Filling:

Sprinkle about 2 tablespoons of the chopped Oreo cookies right in the center of the pancake while it’s cooking.

                          Cover with More Batter:

Pour another 1/4 cup of pancake batter on top of the Oreos, covering them completely. Cook for another 1-2 minutes, or until the bottom side is golden brown.

                              Flip and Cook:

Carefully flip the pancake using a spatula and cook for an additional 1-2 minutes on the other side until golden brown and cooked through.

                                  Repeat:

Repeat the process with the remaining batter and Oreos, adding more butter to the skillet as necessary.

                                      Serve:

Stack the pancakes on a plate, and feel free to drizzle with chocolate sauce, add whipped cream, or top with extra crushed Oreos for that extra indulgence!
