For the crust:

1 cup graham cracker crumbs

2 tablespoons granulated sugar

1/4 cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

Zest of 1 orange

1/4 cup fresh orange juice

2 large eggs

For the creamsicle topping:

1 cup heavy cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

Zest of 1 orange (for garnish)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until combined.

        - Divide the mixture evenly into a 12-cup miniature cheesecake pan or muffin tin. Press down firmly to form a crust at the bottom of each cup.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

              - Add the granulated sugar, vanilla extract, orange zest, and orange juice, mixing until fully incorporated.

                - Add the eggs one at a time, mixing well after each addition, being careful not to overmix.

                  Assemble the Cheesecakes:

                    - Pour the cheesecake filling over each crust, filling them about 3/4 full.

                      - Bake in the preheated oven for about 18-20 minutes or until the edges are set but the center is slightly jiggly.

                        Cool:

                          - Remove the cheesecakes from the oven and allow them to cool in the pan for about 10 minutes.

                            - Transfer to the refrigerator to chill for at least 2 hours, preferably overnight.

                              Prepare the Whipped Cream Topping:

                                - In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.

                                  Serve:

                                    - Once the mini cheesecakes are chilled, remove them from the pan and top each with a generous dollop of whipped cream.

                                      - Garnish with a sprinkle of orange zest.
