2 boneless ribeye steaks (about 1 inch thick)

Salt and black pepper, to taste

2 tablespoons all-purpose flour

1 tablespoon olive oil

1 tablespoon unsalted butter

2 large onions, thinly sliced

3 cloves garlic, minced

2 cups beef broth

1 teaspoon Worcestershire sauce

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

½ cup heavy cream (optional, for a creamier gravy)

Fresh parsley, chopped (for garnish)

Prepare the Steak: Season both sides of the steaks generously with salt and black pepper. Coat lightly with flour. Shake off any excess flour.

    Cook the Steak: In a large skillet over medium-high heat, add olive oil and butter. When it shimmers, add the seasoned steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and set aside to rest.

      Sauté the Onions: In the same skillet, add the sliced onions and cook over medium heat. Stir occasionally until they are soft and golden brown, about 10-15 minutes. Add minced garlic and cook for another minute until fragrant.

        Make the Gravy: Sprinkle the remaining flour over the onions and stir to combine, cooking for an additional 1-2 minutes. Gradually pour in the beef broth while stirring to prevent lumps. Add Worcestershire sauce, thyme, rosemary, and season with salt and pepper to taste.

          Simmer: Allow the gravy to come to a gentle simmer and cook for 10-15 minutes, letting it thicken. If you prefer a creamier texture, stir in heavy cream and simmer for another 3-5 minutes.

            Serve: Slice the rested steak and place on serving plates. Generously spoon the onion gravy over the steak. Garnish with chopped fresh parsley.
