One-Skillet Taco Rice with Ground Turkey

Ingredients
  

1 lb ground turkey

1 cup long-grain white rice (rinsed)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or fresh)

1 small onion, diced

2 cloves garlic, minced

1 can (14 oz) diced tomatoes with green chilies

2 cups low-sodium chicken broth

2 tablespoons taco seasoning

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

Optional toppings: diced avocado, fresh cilantro, sour cream, lime wedges, jalapeños

Instructions
 

Cook the Ground Turkey:

    In a large skillet over medium heat, add the ground turkey. Cook until it’s browned and no longer pink, about 5-7 minutes. Use a spatula to break it apart as it cooks.

      Sauté Vegetables:

        Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion becomes translucent.

          Incorporate Rice and Beans:

            Stir in the rinsed rice, black beans, and corn. Mix well to combine all ingredients.

              Add Tomatoes and Spices:

                Pour in the can of diced tomatoes with chilies (juice included), chicken broth, taco seasoning, cumin, smoked paprika, salt, and pepper. Stir until everything is well combined.

                  Simmer:

                    Bring the mixture to a boil. Once boiling, reduce the heat to low and cover the skillet. Allow to simmer for about 20 minutes or until the rice is cooked and has absorbed most of the liquid. If needed, you can add a little more broth or water to ensure the rice cooks properly.

                      Melt Cheese:

                        Once the rice is cooked, sprinkle the shredded cheddar cheese evenly over the top. Cover for another 2-3 minutes until the cheese has melted.

                          Serve:

                            Remove from heat and let rest for a few minutes. Serve with optional toppings like diced avocado, fresh cilantro, sour cream, lime wedges, or jalapeños.
