One-Pot Taco Spaghetti

1 lb (450g) ground beef or turkey

1 medium onion, chopped

3 cloves garlic, minced

1 packet taco seasoning (about 1 ounce)

1 can (14.5 oz) diced tomatoes (with juices)

1 can (15 oz) black beans (drained and rinsed)

1 cup corn (frozen or canned)

4 cups chicken or vegetable broth

12 oz spaghetti noodles

1 cup shredded cheddar cheese

1 jalapeño, sliced (optional for heat)

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Lime wedges (for serving)

Instructions
 

Sauté the Meat: In a large pot or Dutch oven, over medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes. Break it apart with a wooden spoon as it cooks. Drain excess fat if necessary.

    Add Aromatics: Stir in the chopped onion and minced garlic. Sauté for another 3-4 minutes until the onions are softened and translucent.

      Season: Sprinkle in the taco seasoning and mix well to coat the meat and onions.

        Combine Ingredients: Add the diced tomatoes (with juices), black beans, corn, and chicken broth. Stir to combine.

          Cook the Pasta: Bring the mixture to a gentle boil. Add the spaghetti noodles and stir. Reduce heat to medium-low, cover, and simmer for about 10-12 minutes or until the pasta is cooked al dente, stirring occasionally to prevent sticking.

            Cheesy Finish: Once the pasta is cooked, remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy. If desired, add sliced jalapeños for extra heat.

              Serve: Garnish with fresh cilantro. Serve immediately with a dollop of sour cream or Greek yogurt and lime wedges on the side.
