One-Pot Lemon Herb Pasta

12 oz (340g) spaghetti or linguine

4 cups vegetable broth

1 cup cherry tomatoes, halved

1 medium onion, finely chopped

3 cloves garlic, minced

1 lemon (juice and zest)

½ cup fresh basil leaves, chopped

½ cup fresh parsley, chopped

½ tsp red pepper flakes (optional)

1 tsp salt

½ tsp black pepper

2 tbsp olive oil

½ cup grated Parmesan cheese (optional, for serving)

Instructions
 

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Sauté Garlic and Tomatoes: Add the minced garlic and halved cherry tomatoes to the pot. Sauté for another 2-3 minutes until the tomatoes start to soften.

      Add the Spaghetti: Pour in the uncooked spaghetti or linguine, followed by the vegetable broth, lemon juice, lemon zest, salt, black pepper, and red pepper flakes if using.

        Cook the Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cook uncovered, stirring occasionally, for about 10-12 minutes or until the pasta is al dente and the liquid has mostly evaporated.

          Incorporate Herbs: Once the pasta is cooked, remove the pot from the heat. Stir in the chopped basil and parsley until well mixed.

            Serve: Serve the pasta hot, topped with additional lemon zest, black pepper, and grated Parmesan cheese if desired.

              Garnish: Finish with a few whole basil leaves for garnish for an extra pop of color and freshness.
