One-Pot Lemon Chicken Pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

Salt and black pepper, to taste

4 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for a kick)

4 cups chicken broth

12 ounces spaghetti or linguine

Zest and juice of 2 large lemons

1 cup cherry tomatoes, halved

1 cup fresh spinach

1/2 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions
 

Sear the Chicken: In a large, deep skillet or pot, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add them to the pot and sear until golden brown on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté Aromatics: In the same pot, reduce the heat to medium and add the minced garlic, dried oregano, and optional red pepper flakes. Sauté for about 1-2 minutes until fragrant, stirring frequently to prevent burning.

      Add Broth and Pasta: Pour in the chicken broth, and bring to a gentle boil. Once boiling, stir in the spaghetti (or linguine) and return the seared chicken to the pot. Ensure the pasta is submerged in the broth.

        Simmer: Lower the heat to a simmer, cover the pot, and cook for about 10-12 minutes or until the pasta is al dente, stirring occasionally. If the pasta absorbs too much liquid, you can add a little more broth or water.
