One-Pot Lemon Basil Pasta

12 oz (340g) spaghetti or linguine

4 cups vegetable broth

1 cup cherry tomatoes, halved

1 small onion, finely chopped

4 cloves garlic, minced

1/2 cup fresh basil leaves, packed

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 lemon, zested and juiced

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

Fresh basil leaves, for garnish

Instructions
 

Heat the Olive Oil: In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Add Garlic and Tomatoes: Stir in the minced garlic and cherry tomatoes, cooking for an additional 2-3 minutes until the tomatoes start to soften.

      Combine Ingredients: Add the spaghetti, vegetable broth, salt, black pepper, and red pepper flakes (if using) to the pot. Stir well to ensure the pasta is submerged in the broth.

        Cook the Pasta: Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cover the pot. Cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
