One-Pot Healthy Mediterranean Chicken with Orzo

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup uncooked orzo pasta

4 cups low-sodium chicken broth

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

1 cup baby spinach

Juice of 1 lemon

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

Fresh parsley, chopped, for garnish

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt, pepper, and paprika. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

    Sauté Veggies: In the same pot, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until they begin to soften. Then, add the minced garlic and cherry tomatoes, cooking for an additional 2 minutes until fragrant and the tomatoes are slightly blistered.

      Add Orzo and Broth: Stir in the uncooked orzo, oregano, thyme, and the chicken broth. Bring the mixture to a gentle boil.

        Combine Chicken: Once boiling, reduce the heat to low and return the cooked chicken to the pot. Cover and simmer for about 12-15 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.

          Incorporate Greens: Stir in the baby spinach and allow it to wilt for about 2 minutes.

            Finish with Flavors: Squeeze in the lemon juice, and fold in the sliced olives and crumbled feta cheese. Taste and adjust salt and pepper if needed.

              Garnish & Serve: Serve hot, garnished with freshly chopped parsley and enjoy your Mediterranean feast!
