12 oz (340g) pasta (fettuccine or penne work well)

1 tablespoon olive oil

1 small onion, diced

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust for spice preference)

4 cups vegetable broth

1 cup heavy cream

1 cup sun-dried tomatoes, packed in oil, chopped

2 cups fresh spinach

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves for garnish

Instructions
 

Heat the Oil: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.

    Add Garlic and Spices: Stir in the minced garlic, Italian seasoning, and red pepper flakes. Cook for another 1-2 minutes until fragrant.

      Incorporate Pasta and Broth: Pour in the vegetable broth and bring to a boil. Add the pasta and cook according to package instructions, usually about 10-12 minutes, stirring occasionally to prevent sticking.

        Stir in Cream and Veggies: Once the pasta is al dente, reduce the heat to low. Stir in the heavy cream, chopped sun-dried tomatoes, and fresh spinach. Cook for an additional 3-5 minutes until the spinach is wilted and the sauce has thickened.

          Add Cheese and Seasoning: Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.
