3 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (14 oz) diced tomatoes with green chilies, undrained

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup shredded cheddar cheese (plus extra for garnish)

1 cup corn (fresh, frozen, or canned)

1 can (15 oz) black beans, drained and rinsed

1 cup salsa (mild or spicy, to taste)

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Sauté the Meat: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and the onion is translucent, about 3-4 minutes. Add the ground beef (or turkey) and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

    Add Seasonings: Sprinkle the taco seasoning over the browned meat and stir well to coat. Cook for an additional minute until the spices are fragrant.
