12 oz (340g) fettuccine or your pasta of choice

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) cremini mushrooms, sliced

1 cup (240ml) vegetable broth

1 cup (240ml) heavy cream (or cashew cream for a lighter version)

1 cup (100g) grated Parmesan cheese (or nutritional yeast for a vegan option)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it begins to soften, then add the minced garlic. Sauté for another minute until fragrant.

    Cook the Mushrooms: Add the sliced cremini mushrooms to the pot. Stir well to combine and let them cook for about 5-7 minutes, or until they've released their moisture and are golden brown.
