12 oz (340g) fettuccine or spaghetti

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

4 cups fresh spinach, washed and roughly chopped

4 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh parsley, chopped, for garnish

Instructions
 

Sauté Aromatics: In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Cook Mushrooms: Add the sliced mushrooms to the pot and cook for about 5-7 minutes until they release their moisture and start to brown.

      Add Pasta and Broth: Pour in the vegetable broth, and bring it to a gentle boil. Add the fettuccine or spaghetti to the pot, stirring gently to ensure the pasta is submerged in the liquid.
