1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups uncooked pasta (penne or fettuccine work well)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Sauté the Chicken: In a large pot or skillet, heat the olive oil over medium heat. Season the sliced chicken with salt and pepper. Add the chicken to the pot and cook for about 5-7 minutes, until golden brown and cooked through. Remove the chicken from the pot and set aside.

    Cook the Aromatics: In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute, until fragrant.

      Add Spinach & Tomatoes: Add the chopped spinach and cherry tomatoes to the pot. Cook until the spinach is wilted, about 2-3 minutes.

        Combine Ingredients: Return the cooked chicken back to the pot. Sprinkle the dried Italian herbs over the mixture, then add the chicken broth and bring to a gentle simmer.

          Incorporate Pasta: Stir in the uncooked pasta and ensure that it’s well combined. Cover the pot and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
