8 oz (about 2 cups) pasta of your choice (penne, shells, or rotini work well)

2 cups fresh broccoli florets (about 1 medium head of broccoli)

4 cups vegetable broth or water

1 cup milk (or plant-based alternative)

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon red pepper flakes (optional, for a bit of heat)

Salt and pepper to taste

Fresh parsley or basil for garnish (optional)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

    Add the Liquids and Pasta: Pour in the vegetable broth (or water) and milk. Stir in the pasta, onion powder, garlic powder, salt, and pepper. Bring to a boil.

      Cook the Pasta: Once boiling, reduce heat to a simmer, cover the pot, and let cook for about 8-10 minutes, stirring occasionally, until the pasta is al dente.
