One-Pot Cajun Chicken Alfredo

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225g) fettuccine pasta

2 tablespoons olive oil

1 tablespoon Cajun seasoning (adjust to taste)

4 cloves garlic, minced

1 medium onion, diced

2 cups (480ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

1 cup (150g) cherry tomatoes, halved

2 cups (100g) fresh spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and sprinkle with Cajun seasoning. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.

    Sauté Vegetables: In the same pot, add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for an additional minute, stirring constantly to avoid burning.

      Add Liquid and Pasta: Pour in the chicken broth and bring to a boil. Once boiling, add the fettuccine pasta. Stir occasionally to prevent sticking, and cook for about 10 minutes until al dente, according to package instructions.

        Create the Sauce: Lower the heat and stir in the heavy cream and grated Parmesan cheese. Return the cooked chicken to the pot and mix in the halved cherry tomatoes and fresh spinach. Cook for another 2-3 minutes until the spinach wilts and the sauce thickens. Adjust seasoning with salt and pepper to taste.
