Ingredients

2 cups elbow macaroni

2 cups vegetable broth

1 cup whole milk

1/2 cup balsamic vinaigrette

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/4 teaspoon salt

Fresh basil leaves, for garnish

Instructions

Sauté the Garlic: In a large pot, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Cook the Pasta: Add elbow macaroni to the pot, and stir for about a minute to coat the pasta with the garlic and oil.

Add Liquids: Pour in the vegetable broth, whole milk, and balsamic vinaigrette. Stir well to combine all ingredients.

Season and Simmer: Sprinkle in dried oregano, black pepper, and salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 8-10 minutes, stirring occasionally until the pasta is cooked al dente and the sauce has thickened.

Stir in Cheeses: Remove the pot from heat and gradually stir in the cheddar, mozzarella, and Parmesan cheeses until melted and creamy. Adjust the seasoning to taste if needed.

Serve and Garnish: Serve the mac and cheese hot, garnished with fresh basil leaves for a pop of color and flavor.
