1 lb (450g) ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 packet taco seasoning (about 1 oz/30g)

1 (14 oz/400g) can diced tomatoes with green chilies

1 cup (240ml) chicken or vegetable broth

12 oz (340g) pasta (such as penne or rotini)

1 cup (240ml) milk

1 cup (about 4 oz/115g) shredded cheddar cheese

1 cup (about 4 oz/115g) corn kernels (fresh, frozen, or canned)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optionally, sour cream and avocado slices for serving

Instructions
 

Brown the Meat: In a large skillet or a deep frying pan over medium heat, add the ground beef (or turkey). Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if needed.

    Sauté Aromatics: Add the chopped onion, minced garlic, and diced bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables soften.

      Season and Combine: Stir in the taco seasoning, diced tomatoes (with their juice), chicken broth, and corn. Mix well.

        Add Pasta: Add the pasta into the skillet, ensuring it is submerged in the liquid. Bring everything to a gentle simmer.

          Cook the Pasta: Cover the skillet with a lid and let it simmer for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.

            Creamy Finish: Stir in the milk and half of the shredded cheese. Mix well until the cheese melts and the dish becomes creamy. Season with salt and pepper to taste.
