One-Pan Sausage & Veggie Skillet

1 lb (450 g) Italian sausage (mild or spicy, sliced)

1 medium bell pepper (red, green, or yellow, diced)

1 medium zucchini (sliced into half-moons)

1 cup cherry tomatoes (halved)

1 medium onion (sliced)

3 cloves garlic (minced)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Instructions
 

Preheat the Pan: Heat the olive oil in a large skillet over medium heat.

    Cook the Sausage: Add the sliced Italian sausage to the skillet. Cook, stirring occasionally, until browned and cooked through (about 7-10 minutes). Remove from the skillet and set aside.

      Sauté the Veggies: In the same skillet, add the diced onion and cook until translucent (about 3-4 minutes). Then, add the minced garlic and cook for an additional 1 minute until fragrant.

        Add the Rest of the Ingredients: Stir in the bell pepper, zucchini, and cherry tomatoes. Season with dried oregano, smoked paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the veggies are tender.

          Combine Everything: Return the cooked sausage to the skillet. Mix everything together and heat for an additional 2 minutes to allow the flavors to meld.

            Serve: Remove from heat and garnish with freshly chopped parsley before serving.
