Ingredients

4 boneless, skinless chicken breasts

1 cup long-grain rice (such as basmati or jasmine)

2 ½ cups low-sodium chicken broth

1 medium onion, finely chopped

4 cloves garlic, minced

1 lemon (zest and juice)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup frozen peas

Fresh parsley, chopped, for garnish

Instructions

Prepare Chicken: Season the chicken breasts with salt, pepper, paprika, oregano, and thyme. Rub the spices evenly on both sides.

Sear the Chicken: In a large skillet or sauté pan, heat olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Sear for about 5-7 minutes on each side until golden brown. Remove from pan and set aside.

Sauté Aromatics: In the same pan, add the chopped onion and cook for about 3 minutes until translucent. Stir in the minced garlic and lemon zest, cooking for an additional minute until fragrant.

Add Rice and Broth: Pour in the rice and stir to combine, allowing it to lightly toast with the onions and garlic for about 1-2 minutes. Then, add the chicken broth and lemon juice. Bring to a gentle simmer.

Combine Chicken and Rice: Nestle the seared chicken breasts back into the pan, ensuring they are partially submerged in the liquid. Cover the pan with a lid and reduce the heat to low. Let it cook for about 18-20 minutes, or until the rice is tender and the chicken is cooked through (internal temperature should reach 165°F or 74°C).

Add Peas and Fluff: In the last 5 minutes of cooking, add the frozen peas to the pan and cover again. Once finished cooking, remove from heat and let it sit for 5 minutes, covered. Then, fluff the rice gently with a fork and garnish with fresh parsley.

Serve: Plate the chicken and rice, ensuring you scoop up some of the flavorful broth with each serving. Enjoy this delightful one-pan meal!
