1 pound large shrimp, peeled and deveined

1 cup long-grain white rice

4 cups chicken broth or vegetable broth

1 medium onion, finely chopped

4 cloves garlic, minced

1 lemon (zest and juice)

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté Aromatics: In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.

    Toast Rice: Add the rice to the pan and stir well, allowing it to toast for about 2-3 minutes. This will enhance the flavor of the rice.

      Add Broth & Seasoning: Pour in the chicken or vegetable broth, then add the paprika, dried oregano, salt, and pepper. Stir to combine and bring the mixture to a gentle boil.

        Add Shrimp: Once boiling, add the shrimp on top of the rice. Cover the skillet with a lid and reduce the heat to low. Allow it to simmer for about 15-20 minutes or until the rice is cooked and has absorbed all the liquid.
