One-Pan Lemon Garlic Shrimp and Asparagus

1 pound large shrimp, peeled and deveined

1 bunch of asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

2 tablespoons olive oil

1 lemon (zested and juiced)

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prep Shrimp and Asparagus: In a large bowl, season the shrimp with salt, pepper, red pepper flakes, lemon zest, and half of the lemon juice. Toss to ensure the shrimp are evenly coated. Set aside to marinate for about 10 minutes while you prepare the asparagus.

    Heat Oil: In a large skillet or pan over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Cook Asparagus: Add the asparagus to the skillet and cook for 3-4 minutes, stirring occasionally until they are bright green and tender-crisp. Season with a pinch of salt and pepper.

        Add Shrimp: Push the asparagus to one side of the skillet and add the marinated shrimp to the other side. Cook for about 3-4 minutes on one side, then flip the shrimp over and cook until they turn pink and opaque, about another 2-3 minutes. Stir everything together to combine.

          Finish with Lemon: Once the shrimp are cooked through, add the remaining lemon juice to the skillet and toss to coat. Taste and adjust seasoning if necessary.
