One-Pan Garlic Parmesan Orzo

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

4 cups vegetable or chicken broth

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

Salt and pepper, to taste

½ cup grated Parmesan cheese

½ cup heavy cream

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until they turn translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Toast Orzo: Add the orzo to the skillet with the onions and garlic, stirring frequently for 2-3 minutes to toast the pasta lightly.

      Add Broth & Seasoning: Pour in the vegetable or chicken broth, add the dried oregano, salt, and pepper. Bring to a gentle boil, then reduce heat to low, cover, and simmer for about 10-12 minutes or until the orzo is al dente and has absorbed most of the liquid.

        Incorporate Tomatoes: Stir in the halved cherry tomatoes and cook uncovered for another 2-3 minutes until the tomatoes soften slightly.

          Cream & Cheese: Remove the skillet from heat and stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese has melted and the sauce becomes creamy. Adjust seasoning with more salt and pepper if needed.

            Serve & Garnish: Spoon the creamy orzo into bowls, garnish with freshly chopped parsley, and sprinkle with additional Parmesan cheese, if desired.
