One-Pan Garlic Butter Shrimp and Asparagus

1 lb (450g) large shrimp, peeled and deveined

1 bunch fresh asparagus, trimmed and cut into 2-inch pieces

4 tbsp unsalted butter

4 cloves garlic, minced

1 tsp red pepper flakes (optional)

1 lemon, juiced and zested

Salt and pepper, to taste

1 tbsp olive oil

2 tbsp fresh parsley, chopped (for garnish)

Cooked rice or quinoa, for serving (optional)

Instructions
 

Prep the Ingredients: Rinse the shrimp under cold water and pat dry with paper towels. Trim the asparagus and cut into pieces. Mince the garlic and set aside.

    Heat the Pan: In a large skillet or sauté pan over medium-high heat, add the olive oil. Allow it to heat for about 1 minute.

      Sauté Asparagus: Add the asparagus pieces to the pan. Sauté for about 3-4 minutes until they are bright green and just tender. Remove them from the pan and set aside.

        Cook Shrimp: In the same pan, add the butter and let it melt. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant.

          Add Shrimp: Add the shrimp to the pan, season with salt and pepper, and toss to coat with the garlic butter mixture. Cook for about 2-3 minutes, flipping halfway, until the shrimp turn pink and are cooked through.

            Combine and Finish: Return the asparagus to the pan, pour in the lemon juice and zest, and gently toss all the ingredients together to combine. Cook for an additional minute to heat through.

              Garnish and Serve: Remove from heat and sprinkle with fresh parsley for a pop of color and flavor. Serve immediately over cooked rice or quinoa if desired.
