1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup bell peppers (red, yellow, green), sliced

1 medium zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

1 small red onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Pan: Heat a large, non-stick skillet or pan over medium-high heat. Add 1 tablespoon of olive oil and let it heat up for 1 minute.

    Cook the Chicken: Add the chicken pieces to the pan in a single layer. Season with oregano, smoked paprika, salt, and pepper. Sauté for 5-6 minutes until the chicken is golden brown and cooked through. Stir occasionally to ensure even cooking. Remove the chicken from the pan and set aside.

      Sauté the Veggies: In the same pan, add the remaining tablespoon of olive oil. Toss in the sliced onion, bell peppers, and zucchini. Sauté for about 4-5 minutes until they start to soften.

        Add Garlic and Tomatoes: Stir in the minced garlic and halved cherry tomatoes. Cook for an additional 2-3 minutes until the tomatoes soften.

          Combine Chicken and Vegetables: Return the cooked chicken to the pan. Stir everything together and cook for another 2-3 minutes, allowing the flavors to meld. Taste and adjust seasoning if necessary.
