2 cups boneless, skinless chicken breasts, cubed

2 cups fresh broccoli florets

1 cup cooked brown rice (or quinoa)

1 cup shredded cheddar cheese (divided)

1 cup cream of chicken soup

½ cup milk

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

½ tsp salt

¼ tsp black pepper

¼ cup breadcrumbs (optional for topping)

1 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Chicken: In a large oven-safe skillet, heat the olive oil over medium heat. Add the cubed chicken breasts, season with garlic powder, onion powder, paprika, salt, and black pepper. Sauté for about 5-7 minutes, or until the chicken is browned and cooked through.

      Add Broccoli: Stir in the broccoli florets and cook for an additional 3 minutes. The broccoli will soften slightly but should remain bright green.

        Combine Ingredients: In a mixing bowl, whisk together the cream of chicken soup and milk until smooth. Pour this mixture over the sautéed chicken and broccoli in your skillet. Carefully add the cooked brown rice and half of the cheddar cheese (½ cup) into the skillet, stirring gently to combine everything evenly.

          Top with Cheese: Sprinkle the remaining cheddar cheese on top of the mixture. If desired, add breadcrumbs for an extra crunchy topping.

            Bake: Place the skillet in the preheated oven and bake for about 20-25 minutes or until the cheese is bubbly and golden. If you prefer a slightly crispier top, you can broil for an additional 2-3 minutes, keeping a close eye on it to prevent burning.
