One-Pan Cheesy Beef and Rice Bake

1 lb (450g) ground beef

1 cup long-grain white rice

2 cups low-sodium beef broth

1 cup diced tomatoes (canned or fresh)

1 medium onion, diced

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup frozen peas and carrots mix

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the oven: Preheat your oven to 375°F (190°C).

    Sauté the beef: In a large oven-safe skillet or dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent (about 2-3 minutes). Add the ground beef, breaking it up with a spatula, and cook until browned and no longer pink (about 5-7 minutes). Drain any excess fat if necessary.

      Combine the ingredients: To the skillet, add the rice, beef broth, diced tomatoes (with juices), paprika, oregano, salt, and pepper. Stir everything together to combine well.

        Add the veggies: Gently fold in the frozen peas and carrots into the mixture, distributing evenly throughout.

          Bake: Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for about 5 minutes. Remove the cover, sprinkle the shredded cheddar cheese evenly over the top, and transfer the skillet to the preheated oven.

            Final bake: Bake uncovered for 20-25 minutes, or until the rice is cooked through and the liquid has been absorbed. If the cheese starts to brown too quickly, lightly cover with foil.
