One-Pan Cheesy Beef and Broccoli Rice

Ingredients
  

1 lb ground beef

1 cup uncooked brown rice

2 cups beef broth (low sodium)

2 cups fresh broccoli florets

1 medium onion, diced

3 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Optional: chopped green onions for garnish

Instructions
 

Heat the Pan: In a large skillet or pan, heat the olive oil over medium heat.

    Cook the Beef: Add the diced onion and minced garlic, sautéing for about 2-3 minutes until fragrant and onions are translucent. Then, add the ground beef and cook until browned, breaking it apart as it cooks, about 5-7 minutes. Season with salt, pepper, garlic powder, onion powder, and smoked paprika.

      Add Rice: Stir in the uncooked brown rice, making sure it’s well combined with the beef mixture.

        Pour in Broth: Add the beef broth to the skillet, bringing everything to a gentle boil. Reduce the heat to a simmer and cover the pan. Let it cook for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

          Add Broccoli: Once the rice is cooked, stir in the fresh broccoli florets. Cover and cook for an additional 5-7 minutes, until the broccoli is tender and bright green.

            Cheesy Goodness: Remove the pan from the heat, sprinkle the shredded cheddar cheese evenly over the top. Cover again for a couple of minutes to allow the cheese to melt.
