Ingredients

1 tablespoon olive oil

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

2 cups cooked chicken, shredded (rotisserie works great!)

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried basil

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 package (16 oz) gnocchi (store-bought or homemade)

2 cups fresh baby spinach

1 tablespoon cornstarch (optional, for thickening)

Grated Parmesan cheese, for serving

Fresh parsley, for garnish (optional)

Instructions

Sauté the Vegetables:

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and fragrant. Stir in the minced garlic and cook for an additional minute.

      Add the Chicken:

Incorporate the shredded chicken into the pot, mixing well with the sautéed vegetables. Cook for another 2-3 minutes until heated through.

          Create the Soup Base:

Pour in the chicken broth and heavy cream, stirring to combine. Season with thyme, basil, salt, and pepper. Bring the mixture to a gentle boil.

              Cook the Gnocchi:

Once boiling, add the gnocchi to the pot. Cook according to package instructions, usually around 2-3 minutes (or until they float to the surface), stirring occasionally.

                  Incorporate Spinach:

Stir in the fresh baby spinach and cook until wilted, about 2 minutes. If you desire a thicker soup, mix cornstarch with a little water to create a slurry, and add it to the pot, stirring well. Allow the soup to simmer for another few minutes until thickened to your liking.

                      Serve:

Ladle the soup into bowls and garnish with grated Parmesan cheese and a sprinkle of fresh parsley, if desired. Enjoy your comforting bowl of Chicken Gnocchi Delight!
