8 oz. spaghetti or linguine

4 ripe medium tomatoes, diced

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, torn

1/4 cup extra virgin olive oil

2 cloves garlic, minced

1/4 tsp red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1/2 cup freshly grated Parmesan cheese (or vegan alternative)

Zest of 1 lemon

Lemon wedges, for serving

Instructions
 

Prepare the Pasta: In a large bowl, soak the uncooked spaghetti or linguine in hot water for about 8-10 minutes until softened but not fully cooked. Drain and set aside.

    Combine Tomatoes: In a mixing bowl, combine the diced tomatoes and halved cherry tomatoes. Sprinkle with a pinch of salt and allow them to sit for about 5 minutes to release their juices.

      Create the Flavor Base: To the tomatoes, add the freshly torn basil leaves, minced garlic, red pepper flakes (if using), olive oil, and black pepper. Gently mix to combine and let the mixture marinate for another 5-10 minutes to develop flavor.

        Mix the Pasta: Add the softened pasta to the tomato mixture. Toss until all pasta strands are well-covered in the flavorful mixture.

          Finish with Cheese: Fold in the grated Parmesan cheese and lemon zest for added depth and zestiness. Adjust seasoning with extra salt and pepper, if desired.
