1 ½ cups unsalted roasted pistachios (divided)

1 cup sweetened condensed milk

2 cups heavy cream

1 teaspoon vanilla extract

½ teaspoon almond extract

A pinch of sea salt

Optional: chopped dark chocolate or additional pistachios for garnish

Prepare the Pistachios: Reserve ¼ cup of the pistachios for garnishing later. In a food processor, pulse the remaining 1 ¼ cups of pistachios until they become a fine powder. Set aside.

    Whip the Cream: In a large mixing bowl, pour in the heavy cream. Using an electric mixer, beat on medium-high speed until stiff peaks form. This should take around 3-5 minutes.

      Mix Condensed Milk and Flavors: In a separate bowl, combine the sweetened condensed milk, vanilla extract, almond extract, and a pinch of sea salt. Stir well until fully integrated.

        Fold Ingredients Together: Gently fold the pistachio powder into the condensed milk mixture until well combined. Then, carefully fold in the whipped cream in three parts, ensuring you maintain the airy texture.

          Freeze the Mixture: Transfer the mixture into an airtight container. Smooth the top with a spatula, then sprinkle the reserved chopped pistachios on top. Optionally, you can add chopped dark chocolate for an extra layer of flavor.

            Chill: Cover the container and freeze for at least 6 hours, or overnight, until the ice cream is firm and scoopable.
