1 cup rolled oats

1/2 cup nut butter (e.g., almond, peanut, or cashew)

1/4 cup honey or agave syrup

1/2 cup shredded coconut (unsweetened)

1/4 cup mini chocolate chips (or dairy-free)

1/4 cup chopped mixed nuts (e.g., almonds, walnuts)

1/4 cup dried fruit (e.g., cranberries, apricots, or raisins)

1 teaspoon vanilla extract

A pinch of sea salt

Instructions
 

In a large mixing bowl, combine rolled oats, nut butter, honey or agave syrup, shredded coconut, chocolate chips, chopped nuts, dried fruit, vanilla extract, and a pinch of sea salt.

    Mix all the ingredients thoroughly using a spatula or your hands until they are well integrated and form a sticky mixture. If the mixture feels too dry, add a little more nut butter or honey until you reach the desired consistency.

      Once combined, cover your hands with a little coconut oil or water (to prevent sticking) and roll the mixture into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.

        Once all the mixture has been rolled into bites, place the baking sheet in the refrigerator for about 30 minutes to allow the energy bites to firm up.

          After chilling, enjoy your energy bites right away or store them in an airtight container in the fridge for up to a week. They also freeze well for longer storage!
