Instructions

Prepare the Crust:

    - In a medium mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until all ingredients are well incorporated and resemble wet sand.

      Form the Crust:

        - Press the graham cracker mixture firmly into the bottom of a lined 8x8-inch baking pan, using the back of a measuring cup or your fingers to create an even layer. Place in the refrigerator to set while you prepare the filling.

          Make the Cream Filling:

            - In a large bowl, beat the heavy whipping cream until it forms stiff peaks. In a separate bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, and lemon juice, mixing until fully combined and creamy.

              - Gently fold the whipped cream into the cream cheese mixture until no streaks remain. Be careful not to deflate the whipped cream.

                Assemble the Bars:

                  - Remove the crust from the refrigerator. Spread the cream filling evenly over the crust, smoothing the top with a spatula. Return to the refrigerator to set for about 30 minutes.

                    Prepare the Strawberry Topping:

                      - In a mixing bowl, toss the sliced strawberries with granulated sugar and lemon juice. Let them sit for about 10-15 minutes to macerate, which will draw out their natural juices.

                        Top the Bars:

                          - Once the cream filling has set, evenly distribute the macerated strawberries over the top of the cream filling. Use a spatula to gently spread the strawberries and their juices, creating a beautiful topping.

                            Chill and Serve:

                              - Chill the entire dish for at least 1 hour before slicing into bars. For clean cuts, run a sharp knife under hot water and wipe dry before slicing.

                                Garnish (optional):

                                  - Serve chilled with a dollop of whipped cream and a sprig of fresh mint for a beautiful presentation.
