Ingredients

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1 (8 oz) package cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1 cup fresh strawberries, hulled and sliced

Extra strawberries for garnish

Mint leaves for garnish (optional)

Instructions

Prepare the crust: In a medium bowl, mix together graham cracker crumbs and granulated sugar. Pour in the melted butter and combine until the mixture resembles wet sand.

Assemble the crust: Divide the mixture evenly into the bottom of serving cups or ramekins, pressing it down gently to create an even layer. Set aside.

Make the cheesecake filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, followed by the vanilla extract, mixing until well combined.

Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until fully incorporated.

Layer the filling: Spoon or pipe the cheesecake filling over the crust in each cup, smoothing the tops as needed.

Add strawberries: Layer sliced strawberries on top of the cheesecake filling in each cup, pressing them gently into the filling.

Chill: Refrigerate the cheesecake cups for at least 2 hours to allow them to set properly.

Serve: Before serving, garnish with additional strawberry slices and mint leaves if desired. Enjoy!
