Ingredients

For the Crust:

1 cup digestive biscuits or graham cracker crumbs

1/2 cup unsalted butter, melted

2 tablespoons sugar

For the Filling:

16 oz (450g) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/2 cup fresh strawberries, pureed (about 6-8 strawberries)

For the Topping:

1 cup fresh strawberries, sliced

1 tablespoon sugar (optional, for macerating)

Mint leaves for garnish (optional)

Instructions

Prepare the Crust:

In a mixing bowl, combine the digestive biscuit crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated. Press this mixture firmly into the base of a 9x9-inch (23x23 cm) square baking pan to create an even layer. Set aside in the refrigerator to firm up while you prepare the filling.

      Make the Cheesecake Filling:

In another large bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

          Incorporate the Whipped Cream:

In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Then, fold in the strawberry puree until you achieve a smooth, pink-hued filling.

              Assemble the Bars:

Pour the cheesecake filling over the prepared crust. Use a spatula to spread it evenly. Tap the pan gently on the counter to remove any air bubbles. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until the filling is set.

                  Prepare the Strawberry Topping:

If desired, mix the sliced strawberries with sugar in a small bowl and let them rest for 10-15 minutes. This will create a sweet syrup around the strawberries.

                      Serve the Bars:

Once set, remove the cheesecake from the refrigerator. Using a sharp knife, cut into squares or rectangles. Top each bar with a few of the macerated strawberries (or fresh ones) and garnish with mint leaves if using.

                          Enjoy!

Serve chilled and enjoy the delightful mixture of creamy cheesecake and fresh strawberries!
