1 cup fresh raspberries, plus extra for garnish

1/2 cup lemon juice (freshly squeezed)

Zest of 1 lemon

1/2 cup granulated sugar

1 cup heavy cream

8 oz cream cheese, softened

1 teaspoon vanilla extract

1 cup crushed graham crackers

3 tablespoons unsalted butter, melted

Mint leaves for garnish (optional)

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are evenly coated.

    Distribute the mixture evenly among serving cups or ramekins, pressing it down firmly to create a crust base. Set aside.

      Make the Lemon Cream Filling: In a separate bowl, beat the softened cream cheese until creamy and smooth. Gradually add in the granulated sugar, lemon juice, lemon zest, and vanilla extract. Continue to beat until the mixture is light and fluffy.
