1 cup rolled oats

1/2 cup almond butter (or any nut/seed butter)

1/4 cup honey or maple syrup

1/2 cup finely chopped dried peaches

1/4 cup unsweetened shredded coconut

1/4 cup ground flaxseed

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

Pinch of salt

1/4 cup mini chocolate chips (optional, for extra sweetness)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, dried peaches, shredded coconut, ground flaxseed, cinnamon, and a pinch of salt. Stir until everything is evenly distributed.

    Add Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth.

      Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is well combined. If you’re adding mini chocolate chips, fold them in at this stage.

        Form Bites: Using your hands, scoop out a tablespoon of the mixture and roll it into a bite-sized ball. Place the balls on a baking sheet lined with parchment paper.
