24 Oreo cookies (plus extra for topping)

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 cups whipped cream or whipped topping

1 cup mini chocolate chips (optional)

Instructions
 

Prepare the Base:

    In a food processor, crush the 24 Oreo cookies into fine crumbs. Transfer to a mixing bowl and combine with the melted butter until the mixture resembles wet sand. Press the crumb mixture firmly into the bottom of a lined 9x9-inch square baking dish to form an even crust. Chill in the refrigerator for 15 minutes to set.

      Make the Cheesecake Filling:

        In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add in the granulated sugar and vanilla extract, mixing until well combined and fluffy.

          Fold in the Whipped Cream:

            Gently fold the whipped cream (or whipped topping) into the cream cheese mixture until fully incorporated. If desired, stir in the mini chocolate chips for extra texture and flavor.

              Assemble the Bars:
