1 tsp vanilla extract

2 tsp gelatin powder (optional, for firmness)

½ cup whipped cream (store-bought or homemade)

Instructions
 

Prepare the crust:

    - In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and the mixture resembles wet sand.

      - Press the crumb mixture into the bottom of a 9-inch springform pan, ensuring it is evenly spread and compacted. Set aside in the refrigerator while you prepare the cheesecake filling.

        Make the cheesecake filling:

          - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

            - Gradually add the powdered sugar and continue mixing until fully incorporated and fluffy.

              - In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.

                - Add the orange juice, orange zest, and vanilla extract. If using gelatin, dissolve it in 2 tablespoons of hot water and add it to the mixture. Mix until smooth.

                  Assemble the cheesecake:

                    - Pour the cheesecake filling onto the prepared crust and spread it evenly with a spatula.

                      - Smooth the top and tap the pan gently on the counter to remove any air bubbles.

                        - Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, to set.
