Ingredients

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

1 can (14 ounces) sweetened condensed milk

1 cup fresh lemon juice (about 4-6 lemons)

1 tablespoon lemon zest

1 teaspoon vanilla extract

1 cup heavy whipping cream

Extra lemon slices and mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom and sides of a 9-inch pie pan to form a crust. Chill the crust in the refrigerator while preparing the filling.

Make the Filling: In a large mixing bowl, combine the sweetened condensed milk, fresh lemon juice, lemon zest, and vanilla extract. Whisk together until smooth and well blended.

Whip the Cream: In a separate mixing bowl, using an electric mixer, whip the heavy whipping cream until stiff peaks form. This should take about 3-5 minutes. Be careful not to overmix, as you want light and fluffy whipped cream.

Combine: Gently fold the whipped cream into the lemon mixture until just combined. Be careful not to deflate the whipped cream too much; you want to maintain that airy texture.

Fill the Crust: Pour the lemon filling into the chilled graham cracker crust, spreading it evenly with a spatula.

Chill: Cover the pie with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This allows the flavors to meld and the pie to set.

Serve: When ready to serve, slice the pie and garnish with lemon slices and mint leaves if desired. Enjoy the refreshing taste of this delightful no-bake treat!
