Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

3 tablespoons granulated sugar

Pinch of salt

For the cheesecake filling:

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons fresh lemon juice

Zest of 1 lemon

1 cup whipped cream (store-bought or homemade)

For the lemon swirl:

½ cup lemon curd (store-bought or homemade)

Zest of 1 lemon (optional, for extra flavor)

Instructions

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and a pinch of salt. Mix thoroughly until the crumbs are evenly coated and resemble wet sand. Press the mixture evenly into the bottom of a 9x9-inch baking dish to form the crust. Place it in the refrigerator to set while you prepare the filling.

Make the cheesecake filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the powdered sugar, vanilla extract, lemon juice, and lemon zest. Mix until fully combined and velvety.

Fold in the whipped cream: Gently fold the whipped cream into the cream cheese mixture using a spatula until no streaks remain. This will make the filling light and fluffy.

Layer the filling: Remove the crust from the refrigerator and spread the cheesecake filling evenly over the crust.

Create the lemon swirl: In a small bowl, slightly warm the lemon curd to make it easier to swirl. Drizzle it over the cheesecake filling in small spoonfuls, then use a butter knife or toothpick to swirl the curd gently into the filling. Be careful not to over-mix, as you want to create a beautiful marbled effect.

Chill the bars: Cover the baking dish with plastic wrap and place it in the refrigerator for at least 4 hours, or until fully set. Overnight is preferable for best texture.

Serve and enjoy: Once set, remove the bars from the refrigerator and cut into squares. Optionally, garnish with additional lemon zest or whipped cream before serving.
