1 cup rolled oats

1/2 cup creamy peanut butter

1/3 cup honey or maple syrup

1/2 cup dark chocolate chips

1/4 cup ground flaxseed

1/4 cup shredded coconut (unsweetened)

1 tsp vanilla extract

A pinch of sea salt

Instructions
 

In a large bowl, combine the rolled oats, ground flaxseed, and shredded coconut. Mix well.

    In a separate bowl, stir together the creamy peanut butter, honey (or maple syrup), vanilla extract, and sea salt until smooth and well combined.

      Pour the peanut butter mixture into the dry ingredients and mix until everything is evenly coated. You may find it easier to use your hands for this step.

        Gently fold in the dark chocolate chips until evenly distributed throughout the mixture.

          Once combined, use your hands to form the mixture into small balls, about 1 inch in diameter. You should get around 15-20 energy bites.

            Place the formed bites on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to set.

              Once set, transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to one week or in the freezer for a month.
