Ingredients

8 oz (225g) cream cheese, softened

1 cup Biscoff cookie spread

1 cup powdered sugar

1 cup crushed Biscoff cookies (about 10-12 cookies)

1 tsp vanilla extract

1/4 cup heavy whipping cream

1/2 cup white chocolate chips

Additional crushed Biscoff cookies for coating

Sea salt flakes (optional, for garnish)

Instructions

Prepare the Mixture: In a large mixing bowl, beat the softened cream cheese and Biscoff cookie spread together until smooth and well combined. This should take about 2-3 minutes using an electric mixer on medium speed.

Add the Dry Ingredients: Gradually add the powdered sugar and crushed Biscoff cookies to the cream cheese mixture, mixing thoroughly until everything is incorporated. It should form a thick, creamy consistency.

Incorporate Flavor: Stir in the vanilla extract until evenly mixed.

Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold this into the Biscoff mixture to maintain its light and airy texture.

Chill the Mixture: Cover the bowl with plastic wrap and chill the mixture in the refrigerator for at least 30-45 minutes. This step will help firm up the truffle mixture, making it easier to shape.

Shape the Truffles: Once chilled, use a small cookie scoop or your hands to portion out the mixture and roll it into balls, about 1 inch in diameter.

Melt the Chocolate: While shaping the truffles, melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between until smooth.

Coat the Truffles: Dip each truffle in the melted white chocolate, allowing any excess to drip off. Roll them in the additional crushed Biscoff cookies immediately after coating.

Set and Garnish: Place the coated truffles on a parchment-lined baking sheet. If desired, sprinkle a small pinch of sea salt flakes on top of each truffle for a sweet-salty flavor. Refrigerate until set, about 30 minutes.

Serve and Enjoy: Once set, serve chilled or at room temperature. These truffles can be stored in an airtight container in the refrigerator for up to a week.
