1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream, chilled

For the berry topping:

2 cups mixed berries (strawberries, blueberries, raspberries)

2 tbsp honey or maple syrup (adjust based on sweetness desired)

1 tbsp lemon juice

Fresh mint leaves for garnish (optional)

Prepare the crust: In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until well combined. Press the mixture evenly into the bottom of a lined 9x9 inch baking dish. Use the back of a measuring cup to pack it down firmly. Refrigerate while you prepare the filling.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and powdered sugar with an electric mixer until creamy and smooth. Mix in the vanilla extract. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined. Be careful not to deflate the whipped cream.

      Assemble the bars: Pour the cheesecake filling over the prepared crust, smoothing it out with a spatula. Tap the baking dish gently on the counter to remove any air bubbles. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, until set.

        Prepare the berry topping: While the cheesecake is chilling, rinse the mixed berries and pat them dry. In a small bowl, combine the berries with honey (or maple syrup) and lemon juice. Toss gently to coat. Allow the mixture to sit for about 15-20 minutes until the berries release some juices.
