Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

For the cheesecake filling:

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 ripe bananas, mashed

1 package (3.4 oz) banana pudding mix

1 cup milk

For layering and topping:

1-2 fresh bananas, sliced

Whipped cream (for garnish)

Crushed vanilla wafers (optional)

Instructions

Prepare the crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Set aside while you prepare the filling.

Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing well until fully incorporated.

In a separate bowl, whisk together the banana pudding mix and milk until combined. Let it sit for 2 minutes to thicken. Gently fold the thickened banana pudding into the cream cheese mixture until well blended.

Whip the heavy cream: In another bowl, beat the heavy whipping cream on medium-high speed until stiff peaks form. Carefully fold the whipped cream into the banana cheesecake mixture until fully combined and silky.

Mash the ripe bananas: Gently fold in the mashed bananas, being careful not to overmix, to retain volume in the filling.

Assemble the cheesecake: Pour half of the cheesecake filling over the pre-made graham cracker crust. Layer some sliced bananas over it. Pour the remaining cheesecake filling on top and spread it evenly with a spatula.

Chill: Cover the cheesecake tightly with plastic wrap and refrigerate for at least 4 hours or overnight to set.

Serve: Once chilled and set, remove the cheesecake from the springform pan. Top with whipped cream, additional banana slices, and a sprinkle of crushed vanilla wafers for an extra crunch.

Enjoy! Slice and serve chilled. Your creamy dreamy no-bake banana pudding cheesecake is ready to impress!
